Healthier Than Your Average Carrot Cake (gluten free, dairy free, soy free)
I have looked for a healthy carrot cake recipe for a long long time. I love the idea of making cake ‘healthier’ by putting carrots in it. But I never find one that I can taste carrots, let alone feeling healthy after eating it. Finally, I come across this recipe from my new favorite food blog, Stone Soup. I love this blog because all the recipes are simple, healthy and easy. Eating wholesome healthy food doesn’t have to be hard!
There are only 5 ingredients in the cake and prep time is less than 15 minutes. I made some modification to the original recipe by using coconut oil instead of vegetable or peanut oil (more omega-3 and less inflammatory omega-6), cut down sugar in half and add more carrots. The carrot cake turns out more like corn bread when the carrots were juiced, and more like moist cake when they were grated. It is perfect as dessert cake or eaten with meals like corn bread!
Ingredients
- carrots, coarsely grated (1 and 1/2 cups)
- almond meals (1 and 1/4 cups)
- coconut oil (1/2 cup)
- eggs (3)
- brown sugar (3/4 cup) (sub: stevia, agave nectar or honey)
Directions
Start from preheat the oven to 350F.
Then grate the carrots. You can use a food-processor if you have one. I use my new lifesaver, omega juicer 8004, to basically juice the carrot and use all the meat and juice.
{Edited 11/6/2012: I found out later that the juicer can also just grate carrots without juicing them. So I made this again with actual grated carrot. The cake came out much more moist and chunky!}
Grease your baking pan with a little oil
Mix oil and sugar together.
Work in one egg at a time.
Add grated carrots and almond meal.
Stir well
Bake for about 1 hour. Check the cake for consistency you like– baking time depends on the oven and the baking pan you use. If you like the cake to be more moist, bake it for shorter time.
